How we perceive saltiness
In a typical meal, sodium ions (Na+), which are responsible for salty taste, are dispersed throughout the mouth, meaning not all of them are detected by the tongue. Electric Salt sends a gentle electric current through the food, concentrating the dispersed sodium ions around the tongue.*
